Cauliflower Tortillas
1 medium head of cauliflower
3 eggs
Preheat oven to 375 degrees. Use a food processor, blender, or hand grater to grate the cauliflower into a crumb-like texture. Microwave the cauliflower for 5 minutes, stirring a little halfway through. Place the now-cooked cauliflower in a kitchen towel, that is on top of a sieve, on a bowl (wow, that was confusing...look at the pictures below) and squeeze the water out. Make sure to drain as much excess water as possible.. there is surprisingly A LOT of water in cauliflower. Mix the drained cauliflower and eggs until smooth. Place the mixture on a baking sheet into circles at about 1/4” thick. Bake for 10 minutes. Flip. Bake for another 5-7 minutes. This is important to dry out the tortilla. Move the tortillas to cooling rack to cool, so the bottom does not become soggy

Cucumber subs with turkey, green onions and cream cheese
Peel and half longways 2 cucumbers. Remove seeds to create a "C" shape. Lay out ham slices the length of the cucumbers. spread cream cheese in center of ham and add sliced green onion stalks. Roll ham over cream cheese/onion mix and put in hollowed out cucumbers. Enjoy!! All the goodness without all that bread!

Icebox Pickles
6 cups sliced, unpeeled cucumbers 1 cup sliced red onion
1 cup sliced green bell pepper 1 Tablespoon celery seed
1 Tablespoon salt 2 cups white sugar
1 cup white vinegar
Combine all ingredients in a glass jar or crock. Cover with water and stick in the fridge. The longer they site the tastier they will be. They will keep up to 3 months in the fridge.

Oil based salad dressing (Italian, roasted red pepper Italian, Raspberry vinaigrette, etc...
Marinate asparagus in dressing in a ziplock bag (remove as much air as possible) for a few hours, place on grill, rolling or turning until all sides are slightly browned and center is soft.
