Party Potatoes
5 lb bag of white potatoes 2 - 8 oz pkg. of cream cheese
1 - 8 oz pkg of sour cream chives to taste
Peel potatoes, cut in quarters and boil until tender. soften cream cheese and mix with sour cream. add Potatoes and chives. put into a 9×13 pan, add slivers of butter all over the top and bake at 350 for about 1/2 hour or until a little brown on top.

Loaded baked potato salad
Dressing:
1 cup sour cream 1 cup mayonnaise
2 tablespoons basil, chopped ½ ounce lemon juice
2 teaspoons Dijon mustard 1 teaspoon chili powder
1 teaspoon paprika Salt and black pepper to taste
Salad:
4 Idaho potatoes, washed, baked, peeled and cut into ¾-inch cubes 4 potato skins, fried and rough chopped
½ pound bacon, cooked and diced 1 tablespoon chives, sliced
2 tablespoons onions, chopped 4 ounces Cheddar cheese, shredded
For dressing: In large bowl, mix together sour cream, mayonnaise, basil, lemon juice, Dijon mustard, chile powder, paprika and salt and black pepper.
For salad: Fold the chopped baked potatoes, fried-and-chopped potato skins, diced bacon, chives, onions and Cheddar cheese into dressing. Adjust seasoning to taste.

Parmesan cheese-grated Dried Herbs of your liking (I use basil, oregano and thyme)
Boil baby potatoes until fork tender. Preheat oven to 450 degrees. Drizzle olive oil on a baking sheet, set potatoes on sheet and using a potato masher, gently smash each potato down, rotating masher both ways (so it looks like a thick cookie). Drizzle with olive oil, season with salt/pepper and sprinkle herbs and garlic powder over each. Top with some grated Parmesan cheese. Bake for 20 minutes. Crispy on the outside, soft in the middle, salty, garlicky, herby and cheesy goodness.

Tip: The “as seen on TV” Potato Express will make you a master at potatoes on the grill. Potatoes take forever to cook so this little gadget will make life easier…try 6 to 7 minutes as opposed to 4 but it works.

Turn potatoes, brush top with more seasoned butter and grill another 3-5 minutes.
