I've decided to share my previously secret, award winning chili recipe.
Believe it or not, this is the "not as hot (spicy)" version I make for my wife. If it's still too much for your baby mouth, use regular V8 juice and mild Brooks chili beans. For my original recipe (the one I like), use hot Bush's chili beans and habanero puree'
1lb ground beef 1 lg bottle spicy V8 juice
1 15oz can Brooks hot chili beans 1 15oz can Bush's mild chili beans
1 lg red onion 1 lg green pepper
1 15oz can petite diced tomatoes juice from 1 fresh lime
Cajun seasoning
Optional: diced Chipotle peppers (did you know, chipotle is not a variety of pepper but is simply a smoked and dried Jalapeno pepper...tasty!)
Brown ground beef, do not drain fat, add Cajun seasoning to taste and allow to cook into beef for 10 min. stirring often.
Add Spicy V8 juice, beans, lime juice and diced tomatoes and simmer. (I use 2 brands of beans because they have a unique taste and color that compliment each other) Dice onion, green pepper and Chipotle peppers (if used), add to pot and simmer for an hour.
Optional: Serve with shredded cheddar, sour cream or both on top (I serve mine with crushed spicy nacho Doritos on top instead of crackers)
